4 cups of seedless watermelon, diced

1 cup of cucumber, peeled and diced

1/2 cup of red onion, finely chopped

1/4 cup of fresh mint leaves, chopped

2 tablespoons of lime juice

1 tablespoon of honey (optional)

Salt and pepper, to taste

1 cup of feta cheese, crumbled (optional)

4 small cups or bowls for serving

Prepare the Watermelon: Cut the seedless watermelon into small cubes, making sure to remove any seeds. Place the diced watermelon into a large mixing bowl.

    Add Cucumber and Onion: Peel and dice the cucumber and finely chop the red onion. Add both ingredients to the mixing bowl with the watermelon.

      Incorporate Mint: Rinse the fresh mint leaves, pat them dry, and chop them roughly. Add the mint to the bowl for a fresh burst of flavor.

        Dress the Salad: Drizzle the lime juice over the watermelon mixture. If you prefer a hint of sweetness, add the honey at this stage. Gently toss everything together until well combined.
