1 cup whole wheat flour

1 teaspoon baking powder

1/2 cup brown sugar

1/4 cup maple syrup (or honey)

1 cup canned pumpkin puree

2 large eggs

1/4 cup unsweetened applesauce

1/3 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.

    Prepare Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir well to mix.

      Mix Wet Ingredients: In another bowl, whisk together the brown sugar, maple syrup, pumpkin puree, eggs, applesauce, milk, and vanilla extract until smooth.

        Combine: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Extras: Fold in the chopped nuts and raisins or chocolate chips, if using. This adds texture and flavor to the muffins.

            Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                Cool: Once done, remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
