Ingredients

1 lb boneless, skinless chicken thighs (or breasts), diced

1 cup jasmine rice, rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups low-sodium chicken broth

1 large lemon (zested and juiced)

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp red pepper flakes (optional for heat)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté for 3-4 minutes until translucent. Add the minced garlic, carrots, and celery, cooking for an additional 5 minutes, stirring occasionally.

Cook Chicken: Increase the heat to medium-high and add the diced chicken to the pot. Season with salt, pepper, thyme, oregano, and red pepper flakes (if using). Cook until the chicken is browned on all sides, about 5-6 minutes.

Add Rice and Broth: Pour in the chicken broth, rinsed jasmine rice, lemon zest, and lemon juice. Stir to combine, scraping any browned bits off the bottom of the pot. Bring the mixture to a boil.

Simmer: Reduce the heat to low and cover the pot. Allow the soup to simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender. Stir occasionally to prevent sticking.

Adjust Flavors: Taste the soup and adjust seasoning with more salt, pepper, or additional lemon juice if desired.

Serve: Ladle the soup into bowls and garnish with fresh parsley. Serve warm with crusty bread or crackers on the side for a complete meal.
