1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup olive oil

Zest of 2 large lemons

Juice of 2 large lemons

4 cloves garlic, minced

2 tsp Dijon mustard

1 tsp honey

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional, for heat)

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions
 

Prepare the Marinade: In a large mixing bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, Dijon mustard, honey, rosemary, thyme, salt, black pepper, and red pepper flakes until well combined.

    Marinate the Chicken: Add the chicken cubes to the marinade, ensuring all the pieces are well-coated. Cover the bowl with plastic wrap or transfer to a resealable bag to marinate. Refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

      Preheat the Grill: If using a grill, preheat it to medium-high heat. If using an oven, preheat to 400°F (200°C) and line a baking sheet with parchment paper.
