1 lb shrimp (peeled and deveined)

2 tbsp olive oil

3 cloves garlic (minced)

Zest and juice of 2 limes

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

8 small corn tortillas

1 cup shredded red cabbage

1 ripe avocado (sliced)

1/2 cup fresh cilantro (chopped)

1/4 cup crumbled queso fresco (optional)

Lime wedges (for serving)

Instructions
 

Prep the Shrimp: In a large bowl, combine the shrimp with olive oil, minced garlic, lime zest, lime juice, chili powder, cumin, paprika, salt, and pepper. Toss until well coated. Let marinate for 15-20 minutes.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side or until the shrimp turns pink and opaque.

      Warm the Tortillas: While the shrimp is cooking, warm the corn tortillas in another skillet over low heat for about 30 seconds on each side, or until pliable. Keep them covered with a clean kitchen towel to retain warmth.

        Assemble the Tacos: Place a handful of shredded red cabbage on each tortilla. Top with a generous portion of the cooked shrimp, slices of avocado, and a sprinkle of fresh cilantro. If desired, add crumbled queso fresco on top.
