Zesty Parmesan Crusted Veggie Fritters

Ingredients
  

1 cup grated zucchini (about 1 medium zucchini, moisture squeezed out)

1 cup grated yellow squash (about 1 medium squash, moisture squeezed out)

1 cup finely chopped bell peppers (any color)

1 cup grated carrot (about 1 medium carrot)

1/2 cup finely chopped green onions

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil, for frying

Fresh parsley, chopped (for garnish)

Optional: Lemon wedges, for serving

Prepare the Veggies: In a large bowl, combine the grated zucchini, yellow squash, grated carrot, and chopped bell peppers. Squeeze out any excess moisture from the zucchini and squash using a clean kitchen towel.

    Mix the Dry Ingredients: Add the chopped green onions, flour, Parmesan cheese, minced garlic, oregano, paprika, salt, and pepper to the bowl with the veggies. Stir well to combine.

      Incorporate the Eggs: Crack the eggs into the mixture, and stir until everything is well combined and the mixture holds together.

        Form the Fritters: Using your hands, scoop out about 2 tablespoons of the mixture and shape it into a patty. Repeat this process until all the mixture is formed into fritters.

          Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat until shimmering.

            Fry the Fritters: Place the fritters in the skillet (you may need to do this in batches) and cook for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

              Drain Excess Oil: Once fried, transfer the fritters to a paper towel-lined plate to drain any excess oil.
