2 large eggs

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon baking powder

Salt and pepper to taste

Olive oil or vegetable oil for frying

Prep the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or several layers of cheesecloth and squeeze out as much moisture as you can. This step is crucial to prevent soggy fritters.
