2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 large eggs

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup chopped fresh parsley (or cilantro)

Oil for frying (vegetable or olive oil)

4 large whole wheat or spinach tortillas

8 slices of crispy bacon

1 large tomato, sliced

1 cup fresh lettuce (such as romaine or arugula)

Mayonnaise or your favorite sauce (for spreading)

Prepare the Zucchini: Start by grating the zucchinis into a large bowl. Sprinkle the salt over them and let them sit for about 10 minutes to draw out excess moisture. Then, using a clean kitchen towel, squeeze out the moisture thoroughly. This step is crucial for crispy fritters!

    Mix the Fritter Batter: In the same bowl with the grated zucchini, add the all-purpose flour, grated Parmesan, eggs, black pepper, garlic powder, onion powder, and chopped parsley. Mix until well combined and a batter forms.

      Cook the Fritters: Heat a non-stick skillet over medium heat and add enough oil to coat the bottom. Once hot, drop heaping tablespoons of the zucchini batter into the skillet, flattening them slightly with the back of a spatula. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and let them drain on paper towels.

        Prepare the Wraps: While the fritters are cooking, lay out your tortillas. Spread a thin layer of mayonnaise on each tortilla.
