Zucchini Lasagna Roll-Ups

Ingredients
  

4 large zucchinis

1 cup ricotta cheese

1 cup mozzarella cheese, grated

1/2 cup Parmesan cheese, grated

1 large egg

2 cups marinara sauce (homemade or store-bought)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini:

      - Wash the zucchinis and slice them lengthwise into thin strips, about 1/4 inch thick.

        - Optionally, you can use a mandoline slicer for even thickness.

          - Grill or lightly sauté the strips in a non-stick skillet over medium heat for about 2-3 minutes on each side, just until slightly softened. Lay them flat on a paper towel to cool and absorb excess moisture.

            Make the Filling:

              - In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, basil, salt, and pepper. Mix until well-blended.

                Assemble the Roll-Ups:

                  - Spread a layer of marinara sauce evenly at the bottom of a baking dish.

                    - Take one zucchini slice, place a spoonful of the ricotta filling on one end, and carefully roll it up tightly.

                      - Place the roll-up seam-side down in the baking dish. Repeat this for all zucchini slices and filling.

                        Top the Roll-Ups:

                          - Once all the roll-ups are in the dish, spoon additional marinara sauce over the top and then sprinkle the remaining mozzarella cheese.

                            Bake in the Oven:

                              - Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                                - Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                                  Serve and Garnish:

                                    - Once done, allow the dish to rest for 5 minutes. Garnish with fresh basil leaves before serving.
