3 large zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup marinara sauce (preferably homemade or high-quality store-bought)

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves (for garnish)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a mandoline slicer or a sharp knife, slice the zucchinis lengthwise into thin strips (approximately 1/8 inch thick). Lay the strips on a clean kitchen towel and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture. Pat them dry with another towel.

    Make the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix until thoroughly combined.

      Assemble the Rolls: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one zucchini strip and place a spoonful of the cheese mixture at one end. Roll it up tightly and place seam-side down in the baking dish. Repeat with all zucchini strips and cheese filling.

        Add Sauce and Cheese: Once all the rolls are assembled, top the rolls with the remaining marinara sauce, making sure they're covered. Sprinkle the remaining mozzarella cheese over the top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
