4 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

3 large eggs

1/2 cup grated Parmesan cheese

1/4 cup olive oil

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 cup chopped fresh basil or parsley

Optional: 1/4 cup pine nuts or walnuts for added crunch

Instructions
 

Prepare the Zucchini: In a large bowl, sprinkle the grated zucchinis with salt and let them sit for about 15-20 minutes. This will help draw out excess moisture.

    Preheat Oven: Preheat your oven to 375°F (190°C) and grease a baking dish (approximately 9x13 inches) or line it with parchment paper.

      Squeeze Zucchini: After the zucchini has rested, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible. This step is key to ensuring your scarpaccia is not soggy.

        Mix Ingredients: In a separate bowl, beat the eggs, and then stir in the olive oil, grated Parmesan cheese, black pepper, oregano, and garlic powder. Whisk until well combined.

          Combine Mixtures: Add the squeezed zucchini to the egg mixture, followed by the flour. Stir until everything is well combined. If using, fold in the chopped basil or parsley and pine nuts or walnuts.

            Pour and Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for approximately 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

              Cool and Serve: Remove from the oven and allow it to cool for about 10 minutes. Cut into squares or slices and serve warm or at room temperature, garnished with additional fresh herbs if desired.
